COFFEE CAKE WITH ELDERBERRIES
AND LEMON ICING
Sockerkaka med fläder och citronglasyr
10 pieces
4½ oz soft butter
1 cup sugar
3 eggs
1.4 cup flour
2 teaspoons vanilla sugar
2 teaspoons baking powder
grated zest from 1 lemon
0.2 cup concentrated
elderberry drink
Lemon icing:
0.8 cup powdered sugar
1 tablespoon fresh lemon juice
sliced lemon
Preheat oven to 347F.
Stir fat and sugar until fluffy. Add the eggs, one by one, and stir vigorously. Mix flour, vanilla sugar and baking powder. Stir the flour mixture, lemon zest and elderberry drink in the batter.
Grease and flour a round baking pan with a hole in the middle, capacity 8 cups. Pour the batter in the pan and bake in the middle of the oven for 45 to 55 minutes. Try with a tester. Unmould the cake and allow to cool under the pan.
Icing:
Stir powdered sugar and lemon juice to a rather thick icing, though still runny. Drizzle over the cake.
Decorate with thin lemon slices.
