Ground Meat Patties with Red Onion Marmalade - Köttfärsbiffar med rödlöksmarmelad

GROUND MEAT PATTIES WITH RED
ONION MARMALADE
Köttfärsbiffar med rödlöksmarmelad

0.3 cup dried breadcrumbs
0.6 cup water
1.1 lb ground meat, beef + pork
or what you prefer
1 egg
salt, pepper
1 lb 12 oz potatoes
1 tablespoon olive oil
8.8 oz cherry tomatoes
1 teaspoon dried thyme

Red onion marmalade:
3 red onions
2 tablespoons butter or margarine
1 tablespoon cane sugar
1 tablespoon white wine vinegar
2 tablespoons water


Preheat oven to 437F.

Mix breadcrumbs and water in a bowl and let swell for 5 minutes. Add ground meat, egg, salt and pepper and mix to a smooth batter. Shape into 8 patties and fry in butter for about 4 minutes on each side.

Red onion marmalade:
Peel, split and thinly slice the onions and sauté until tender, but without coloring, in a saucepan with butter. Add sugar, vinegar and water and reduce until the liquid is gone. Flavor to taste with salt and pepper.

Scrub the potatoes and cut them in pieces. Mix potatoes, oil, salt and pepper and roast in the oven for about 20 minutes. Add tomatoes and flavor with thyme. Continue roasting for another 10 minutes. Serve with the patties, topped with red onion marmalade.
