DOUBLE LEMON COOKIES
Dubbla citronkakor
15 double cookies
4.4 oz butter
0.3 cup powdered sugar
grated zest from 1 lemon
0.2 cup Maizena
1 cup flour
Filling:
1½ oz butter
0.4 cup powdered sugar
1 tablespoon fresh lemon juice
Preheat oven to 302F.
Beat room-tempered butter and powdered sugar until fluffy. Blend in lemon zest, Maizena and flour and work to a dough. Roll 30 small balls of the dough and place them on a paper-lined baking plate. Press them with a fork and bake for 15 minutes. Allow to cool completely.
Filling:
Beat room-tempered butter and powdered sugar until fluffy. Stir in the lemon juice. Put the cookies two and two together with a dab of creme in between.
