EASY-MADE REDCURRANT CAKE
Lättbakad kaka med vinbär

Serves 6

5.3 oz butter or margarine
½ cup regular milk
2 eggs
0.8 cup sugar
1.7 cup flour
2 teaspoons baking powder
2 teaspoons vanilla sugar
0.6 cup redcurrants

Decoration:
powdered sugar


Preheat oven to 347F.

Melt the fat in a saucepan and add the milk so that the mixture is lukewarm. Remove from heat and allow to cool. Beat the eggs and sugar until fluffy. Mix the dry ingredients and add them to the egg batter, alternating with the milk-butter mixture. Stir to a smooth batter.

Sprinkle some redcurrants in a greased baking pan, preferably a springform pan with a diameter of about 9 inches, and sprinkle some berries over the surface as well. Bake in the lower part of the oven for about 40 minutes. Allow to cool and sift with powdered sugar.
