Steamboat Cake - Ångbåtskaka

STEAMBOAT CAKE
Ångbåtskaka

Serves 10

Layer:
2 cups flour
0.4 cup sugar
5.3 oz butter
2 eggs
fresh juice from 1 lemon

Filling:
6.2 oz butter
0.8 cup sugar
2 teaspoons vanilla sugar
3½ eggs
4½ tart apples

For serving:
whipped cream
grated zest from 1 lemon
vanilla sugar


Mix flour and sugar in a bowl and chop the butter into it. Add eggs and lemon juice and blend everything together. Leave the dough for 1 hour and heat the oven to 347F. Line a pie pan with the dough.

Stir butter and sugar for the filling. Add vanilla sugar and one egg at a time. Roughly grate the apples and blend them in. Fill the pie crust and bake for 30 to 40 minutes.

Serve lukewarm with lightly whipped cream, flavored with lemon zest and a little vanilla sugar or vanilla powder.
