GRANDMA'S LARGE APPLE CAKE
Mormors stora äppelkaka
1 cake, approx 10 pieces
5½ apples, preferably tart ones
1½ tablespoon ground cinnamon
5.3 oz butter
3 eggs
1.6 cup sugar
1.6 cup dried breadcrumbs
0.4 cup finely chopped almonds
4 finely chopped bitter almonds
2 tablespoons flour
2 teaspoons baking powder
0.2 cup cream
For serving:
vanilla sauce
Grease and flour a large springform pan, diameter approx 11 inches. Preheat the oven to 347F.
Peel, core and finely dice the apples, then mix with cinnamon in a bowl. Melt the butter and allow to cool. Beat eggs and sugar until fluffy. Blend in the fat and then the dry ingredients. Last, gently stir in the cream and the diced apples.
Pour the batter in the baking pan and bake in the lower part of the oven for 50 to 60 minutes or until a cake tester comes out dry. This cake is best if served a little lukewarm, but it's also very good served cold with lots of vanilla sauce. It's sure to be enough even if your whole family comes to visit, but it crumbles and can't be cut in thin slices.
Enjoy!
Bella
