STREUSEL CAKE WITH LINGONBERRY JAM
Strösselkaka med lingonsylt
1.8 cups flour
0.6 cup sugar
3 teaspoons baking powder
5.3 oz butter or margarine
1 egg
0.8 cup lingonberry jam
Streusel:
0.6 cup oats
0.4 cup sugar
3½ oz almond paste
2.6 oz melted butter or margarine
Preheat oven to 392F.
Mix flour, sugar and baking powder. Add butter and finely divide it to a crumbly mixture. Beat the egg, stir it into the crumble and quickly work to a dough. Flatten it out in a greased roasting pan, approx 8 x 12 inches and divide the jam over the cake.
Roughly grate the almond paste. Blend it with oats, sugar and melted butter to a streusel. Sprinkle this over the cake. Bake in the middle of the oven for about 15 to 20 minutes. Allow to cool and cut in squares.
