The Chef's Fillet of Pork - Köksmästarens fläskfilé

THE CHEF'S FILLET OF PORK
Köksmästarens fläskfilé

Serves 4

1.1 lb fillet of pork
salt, pepper
1 onion
4 slices streaky bacon
1 tablespoon flour
1 tablespoon tomato paste
0.4 cup water
0.6 cup cream
½ tablespoon rosé pepper
chopped parsley


Shred the fillet and the bacon. Peel and finely chop the onion. Brown the fillet in some fat until golden all around. Add onion and bacon and brown it with the meat and bacon. Sprinkle with flour, salt and pepper and stir.

Stir tomato paste with water and blend it into the pan together with cream. Simmer over low heat for about 5 minutes. Flavor to taste. 

Sprinkle with rosé pepper and chopped parsley. Serve with tomato salad and boiled rice.
