ITALIAN BERRY TRIFLE
Italiensk bärtrifle
Serves approx 4
5 slices cake, like a lemon or
vanilla pound cake
3 tablespoons sherry or
concentrated fruit drink
4 cups berries
Vanilla sauce:
3 egg yolks
1.2 cups cream
1 tablespoon sugar
1 tablespoon vanilla sugar
Meringue:
3 egg whites
0.8 cup sugar
1 teaspoon vanilla sugar
Preheat oven to 392F.
Crumble the cake slices and place in an oven-proof pan. Drizzle with sherry or fruit drink. Rinse and trim the berries and spread them over the cake.
Mix egg yolks, cream and sugar in a saucepan. Bring to a boil while beating, but do not let it boil. Cool the sauce completely, stirring occasionally. Flavor with vanilla sugar and pour the sauce over the strawberries.
Beat the egg whites until stiff. Beat in half of the sugar and gently stir the rest in. Spread the batter over the vanilla sauce. Bake for 4 to 5 minutes to color the meringue. Serve the trifle warm or cold.
