PEACH SQUARES
Mjuka persikorutor

Approx 24 squares

1 can peaches in their own
juice, approx 14 oz
3½ oz butter
0.6 cup juice from the peaches
3 eggs
1.2 cup sugar
1 tablespoon vanilla sugar
2 teaspoons baking powder
1 teaspoon ginger
1.8 cups flour

Decoration:
powdered sugar


Preheat oven to 347F.

Pour off the juice from the peaches, but reserve it. Drain and cut the peaches in thin wedges. Melt the butter and mix with the peach juice. Beat eggs and sugar until white and fluffy. Stir in the butter mixture into the egg batter. Mix vanilla sugar, baking powder, ginger and flour and sift it into the batter while stirring. Gently blend in the peach wedges.

Pour the batter in a greased, floured roasting pan, approx 10 x 14 inches. Bake in the lower part of the oven for about 30 minutes. Allow the cake to cool before cutting in squares. Sift with powdered sugar before serving.
