Almond Squares with Blackcurrant Icing - Mandelrutor med svartvinbärsglasyr

ALMOND SQUARES WITH BLACKCURRANT ICING
Mandelrutor med svartvinbärsglasyr

45 squares (well, rectangles really, but ...)

2 cups flour
0.4 cup sugar
1 tablespoon baking powder
1 tablespoon vanilla sugar
6.2 oz butter or margarine
1 egg

Filling:
0.6 cup almonds
2 bitter almonds
8.8 oz almond paste
1 egg
1 oz butter or margarine

Icing:
5 tablespoons blackcurrant jelly
2 cups powdered sugar
3 tablespoons water


Preheat oven to 347F.

Chop together flour, sugar, baking powder, vanilla sugar and butter to a crumbly mixture. Lightly whisk the egg. Add it to the flour mixture and work to a dough. Roll out and place in a roasting pan lined with baking paper. Leave in the fridge for 30 minutes. It's easier to spread out the almond paste when the dough is cold.

Scald, skin and finely grind the almonds. Mix with grated almond paste, beaten egg and butter. Spread this over the cold dough and bake for 20 minutes.

Icing:
Stir together blackcurrant jelly, powdered sugar and water and spread this icing over the warm cake. 

Allow the cake to cool and cut it in rectangular pieces.
