Pork Chops with Warm Potato Salad - Kotlett med varm potatissallad

PORK CHOPS WITH WARM POTATO SALAD
Kotlett med varm potatissallad

Serves 2

4 to 5 potatoes
a piece of leek, 4 inches
0.6 cup vegetable bouillon
1 teaspoon Dijon mustard
1 garlic clove
2 teaspoons white wine vinegar
salt, pepper
2 tablespoons oil
1 tablespoon capers
0.2 cup fresh thyme
2 pork chops
salt, pepper
1 tablespoon butter or margarine
grated lemon zest


Peel and slice the potatoes in rather thick slices and boil until almost tender. Pour off the water and mix the potatoes with shredded leek. Heat the bouillon and pour it on the potatoes. Mix mustard, crushed garlic, vinegar, salt and pepper and beat in the oil.

Pour the dressing over the potatoes and blend in capers and thyme. Flavor the pork chops with salt and pepper and fry for 5 minutes on each side in a frying pan with butter. Sprinkle with grated lemon zest and serve with a tomato salad.
