Saffron Squares with Orange Icing - Saffransrutor med apelsinglasyr

SAFFRON SQUARES WITH ORANGE ICING

24 squares

3 eggs
1.2 cup sugar
1.8 cup flour
2 teaspoons baking powder
0.017 oz (yes I know, very specific!)
ground saffron
7 oz melted butter
fresh juice from ½ orange

Icing:
1.2 cup powdered sugar mixed
with some cane sugar
2 tablespoons fresh orange juice
3½ oz candied, chopped orange peel


Grease and flour a roasting pan, approx 10 x 12 inches, or line it with baking paper. 

Beat eggs and sugar until white and fluffy. Mix flour, baking powder and saffron in a bowl. Stir in melted butter, orange juice and flour mixture into the egg batter and stir to a smooth mixture. Pour in the pan and bake at 347F in the lower part of the oven for 25 to 30 minutes. Allow to cool in the pan for 10 minutes before unmoulding. Allow to cool completely.

Mix powdered sugar and orange juice. Spread the icing over the cake and distribute the candied orange peel on top. Leave until the icing has set, then cut in squares.
