LEMON FUDGE
Citronfudge
40 pieces of fudge
4.4 oz marshmallows
1.7 oz butter
0.8 cup sugar
0.4 cup heavy cream
1 tablespoon fresh lemon juice
3½ oz white chocolate
Put marshmallows, butter, sugar and cream in a saucepan. Melt together while stirring. Gently add lemon juice while stirring and simmer for a minute or so. Remove from heat and stir in the chopped chocolate. Stir until melted.
Pour the batter in a pan, 7½ x 9 inches, lined with baking paper. Leave to set in the fridge. Cut in squares and sprinkle with grated lemon zest if you wish.
