CHICKEN STEW WITH VEGETABLES
AND CREAMY SAUCE
Kycklinggryta med grönsaker och krämig sås
Serves 4
1.1 lb chicken fillets
1 tablespoon butter
1 teaspoon salt
some black pepper
5 oz streaky bacon, sliced
Sauce:
1.6 cup pan juices and water
2 tablespoons concentrated veal fond
0.8 cup creme fraiche
2 tablespoons Dijon mustard
1 teaspoon paprika
3 tablespoons flour
8.8 oz broccoli
green beans
3½ oz yellow wax beans (hope it's called that)

green beans

Trim the chicken and cut in pieces. Heat the butter in a frying pan and brown all around. Flavor with salt and pepper. Fry the bacon in another pan, cut in pieces and drain on a paper towel.
Remove the chicken from heat and rinse out the pan. Strain the pan juices and water in a saucepan. You need 1.6 cup liquid. Add remaining ingredients for the sauce and bring to a boil.
Trim and split the broccoli in smaller pieces. Trim the green beans. Place the chicken in a wide, shallow frying pan, pour the sauce over it and add beans, broccoli and bacon. Simmer for about 5 minutes.
Boil the yellow beans and top the stew with those, some green beans and decorate with thopped chives. Serve with rice or pasta.
