COTTAGE CHEESE POTATO CAKE
Potatiskaka med keso
Serves 4
1.1 lb potatoes
2 teaspoons butter
0.6 cup regular milk
0.6 cup cream
0.8 cup cottage cheese
2 crushed garlic cloves
1 teaspoon salt
some white pepper
Preheat oven to 437F.
Peel and roughly grate the potatoes. Put them in a greased, oven-proof pan. Mix milk and cream with cottage cheese, garlic, salt and pepper. Pour this mixture over the potatoes. Bake in the oven for about 50 minutes. Serve with crisp bacon, sausages or smoked mackerel.
