CRUSHED POTATOES WITH BACON AND BROCCOLI
Krossad potatis med bacon och broccoli
Serves 4
12 middle-sized, "floury"
potatoes, e.g. King Edward
1 teaspoon salt
½ teaspoon paprika
3½ oz small broccoli florets
0.8 cup grated cheese
5 oz streaky bacon
Paprika butter:
1.7 oz butter
1 crushed garlic clove
1 bunch parsley
some paprika
Boil the potatoes unpeeled. Preheat oven to 482F. Boil the broccoli florets for 5 minutes or until suitably tender. Spread out the potatoes on a baking plate and press each potato once so that it crushes slightly. Flavor with salt and sprinkle with paprika, then put the plate in the oven for 10 minutes.
Make the paprika butter. Take out the potatoes, top with broccoli and divide half of the butter on the potatoes. Sprinkle with cheese and put back in the oven for about 5 minutes. Fry the sliced bacon.
Divide remaining butter on the potatoes when serving and top with fried bacon.
