FILLED STEAKS WITH POTATOES AU GRATIN
Potatisgratäng med fylld biff
Serves 4
2.2 lbs potatoes
1 onion
1 green bell pepper
0.8 cup grated cheese
salt, pepper
0.8 cup heavy cream
0.4 cup regular milk
1.1 lb very thinly sliced beef,
"minute steaks"
3½ oz cream cheese with herbs
1 oz salami
0.4 cup green olives, pimento-filled
1 tablespoon butter or margarine
For serving:
tomato salad
Preheat oven to 437F.
Peel and slice the potatoes. Peel, split and slice the onion. Trim and shred the bell pepper. Grease a pan and alternate potatoes, onion, bell pepper and cheese, flavor with salt and pepper between the layers. Pour on cream and milk and cook in the oven for 40 minutes.
Flavor each minute steak with some salt and pepper. Put a slice of salami on each, a dab of cream cheese and sliced olives. Fold up and secure with a toothpick. Fry in some butter in a frying pan, on both sides.
Place the steaks on top of the potatoes and finish cooking in the oven for about 10 minutes. Serve with a tomato salad.
