PISTACHIO MERINGUE DESSERT
Pistagemarängdessert
Serves 8
3 egg whites
a little pickling vinegar, 12%
0.8 cup sugar
0.4 cup chopped pistachios
Decoration:
redcurrants
fresh mint
For serving:
0.8 cup heavy cream
0.4 cup lemon curd
Preheat oven to 212F.
Beat the egg whites until stiff. Add a few drops of pickling vinegar in the batter and beat some more. Add sugar, little by little, and beat to a firm, glossy meringue. Place the meringue in a piping bag and pipe 8 rounds and 8 meringue tips on a paper-lined baking plate. Sprinkle with chopped pistachios. Bake in the middle of the oven for about 1 1/2 hours until the meringue has set. Place on a rack.
When serving, pipe the whipped cream on the bottom rounds, add a tablespoonful of lemon curd and redcurrants. Finish with a meringue tip and decorate with currants and mint. Serve immediately.
