LENTIL SOUP WITH LEMON AND HERBS
Linssoppa med citron och örter
Serves 2
5.3 oz parsnips
1 celery stem
1/4 fresh red chilifruit
1 garlic clove
1 tablespoon olive oil
2 cups water
0.6 cup red lentils
salt, pepper
1 tablespoon tomato paste
For serving:
1 carrot
1 celery stem
½ fresh red chilifruit
green herbs
bread
Peel and dice the parsnip. Chop the celery. Trim and chop the chilifruit. Peel and chop the garlic. Sauté parsnips, celery, chili and garlic in a pot with oil. Add water and lentils and boil for 20 to 25 minutes or until the lentils are done.
Mix the soup and flavor to taste with tomato paste, salt and pepper. Serve with shredded carrot, celery, chili, green herbs and bread.
