ROAST POTATOES WITH PARMESAN
AND HERB TOPPING
Rostad potatis med parmesan- och örttopping
Serves 4
2.2 lbs even-sized, small potatoes,
skin on
2 tablespoons garlic cloves
3 tablespoons olive oil
3 tablespoons finely chopped parsley
1 teaspoon salt
some black pepper
0.4 cup mayonnaise
Decoration:
0.6 cup grated Parmesan cheese
chopped parsley
Preheat oven to 437F.
Scrub the potatoes and place on a paper-lined baking plate or in a greased oven-proof pan. Peel and finely chop the garlic. Mix oil, garlic, parsley, salt and pepper, pour it all over the potatoes and blend well. Roast the potatoes just below the middle of the oven for about 25 minutes or until golden and tender.
Mash lightly with a fork and dab out the mayonnaise on top. Sprinkle with grated Parmesan and chopped parsley.
