ONION POTATOES

Serves 4
2.2 lbs new potatoes
1 onion
2 leeks
1 cup vegetable bouillon
salt, pepper
½ teaspoon crumbled thyme
chopped parsley
Scrape the potatoes. Peel and thinly slice the onion. Trim and slice the leeks. Sauté onions and potatoes, covered, for about 5 to 7 minutes in some fat without coloring. Stir occasionally. Dilute with bouillon and add salt, pepper and thyme. Simmer it all for about 10 minutes or until the potatoes are tender.
Remove the lid towards the end and flavor to taste. Sprinkle generously with chopped parsley.
