BAKED POTATOES WITH CREAMY CHICKEN
Bakad potatis med krämig kycklingröra
Serves 2
1.1 lb baking potatoes
approx 1 oz green lettuce
leaves
8.8 oz tomatoes
Chicken:
1 grilled chicken "club"
(meaning drumstick and upper
thigh sticks together)
½ small red onion
0.4 cup low-fat creme fraiche
1 tablespoon mayonnaise
1 oz finely grated Parmesan cheese
0.2 cup mixed, chopped fresh herbs,
e.g. thyme, chives and basil
salt, pepper
Preheat oven to 437F.
Prick the potatoes and bake it in the oven for 45 minutes to 1 hour.
Chicken:
De-bone the chicken and throw away the skin (or roast it on a plate in the oven until it's crispy). Cut the chicken in pieces. Finely chop the onion. Mix creme fraiche, mayonnaise, Parmesan, onion and herbs. Flavor to taste with salt and pepper and stir in the chicken.
Cut an X in the potatoes and dab the chicken mix in there. Serve with lettuce and tomatoes.
