CHICKEN STEW WITH MUSHROOMS AND BACON
Kycklinggryta med svamp och bacon
A creamy chicken stew with mushrooms and bell peppers. Sprinkle with crispy bacon and parsley and serve with e.g. rice and a salad. You're good to go!
Serves 4
1 lb chicken breast fillets
1 tablespoon Chinese soy sauce
9 oz fresh mushrooms
1 onion
2 tablespoons butter
1 teaspoon salt
some pepper of your choice
2 tablespoons concentrated veal fond
1,2 cup water
2 tablespoons tomato paste
2 teaspoons paprika
2 tablespoons redcurrant jelly
5 oz streaky bacon
1 cup cream
2 tablespoons flour
1 red bell pepper
3 tablespoons chopped parsley
Cut the chicken in pieces and mix with the soy sauce. Slice the mushrooms. Peel and roughly chop the onion. Sauté mushrooms and bacon in butter, take it up and fry the chicken. Flavor with salt and pepper.
Mix the onion-chicken mix in a pot and add veal fond, water, tomato paste, paprika and redcurrant jelly. Simmer slowly for about 5 minutes. Check for taste with salt and pepper.
Shred and fry the bacon. Mix cream and flour and stir this into the pot. Simmer for another 5 minutes. Shred the bell pepper and add towards the end of cooking.
Sprinkle with bacon and parsley and serve the stew with rice and a salad.
