Apple Chicken - Äppelkyckling

APPLE CHICKEN
Äppelkyckling

Serves 4

1 chicken
1 lemon
1 teaspoon salt
some pepper
approx 0.4 cup chicken bouillon
2 apples
3½ oz smoked ham
1 leek
1.2 cup cream
1 tablespoon concentrated
chicken fond

Decoration:
fresh thyme


Rinse and wipe off the chicken. Split the lemon and rub the chicken inside and out with it. Flavor with salt and pepper. Brown the chicken until golden all around in some fat in a pot over medium to high heat. Lower the heat and pour the bouillon in the pot. Braise the chicken, covered, for about 45 to 50 minutes or until cooked through.

Meanwhile, core and dice the apples. Trim and shred the leeks and shred the ham. Sauté apples, leek and ham in some fat. Add cream and chicken fond, bring to a boil and flavor to taste with salt and pepper.

Take up the chicken and cut in 4 pieces. Put them in the apple mix and let the chicken simmer for about 5 minutes. Decorate with some fresh thyme.

Banquet chicken - Gästabudskyckling

BANQUET CHICKEN

Be on the lookout for when chicken and tomatoes are sold at reduced prices, and you can make a cheap and excellent chicken dish.

4 servings

1 chicken, approx 2 lbs, or 2 lbs chicken parts
1 tablespoon butter or margarine
3 tablespoons chopped red onion
1 teaspoon salt
1 teaspoon thyme
½ teaspoon paprika
1 can whole tomatoes, 14 oz
2 bay leaves
½ chicken bouillon cube
2/3 cup cream, 15% fat
2 tablespoons flour
4 tablespoons water

Garnering:
bell peppers
parsley


Cut the chicken in pieces and wipe them off. Melt the fat in a saucepan and brown the chicken on all sides until coloured. Transfer them to an oven-proof dish. Sizzle the onions in the pan for a few minutes and put it in the dish. Sprinkle with salt, thyme and paprika, add the tomatoes and bay leaves and fry the chicken in the middle of the oven at 350F for 40 minutes or until done.

Pour the tomato liquid from the chicken in a saucepan and keep the chicken warm. Add bouillon cube and cream. Stir the flour with the water and thicken the sauce. Let it boil for a few minutes. Flavour to taste and add more spices if necessary.

Pour the sauce over the chicken, sprinkle with shredded sweet peppers and parsley and serve the thicken.
