MOM'S SAUSAGE PAN

Swedes would hardly manage the everyday food without the dear sausage, not to mention the mustard to go with it. Try this sausage pan with onions and cream to give the reliable staple food some variation. 

Serves 4

2 onions
1 tablespoon butter or margarine
1 tablespoon water
12.3 oz wiener sausage (yes!!!) or a smaller sausage (yes!!!)
0.4 to 0.6 cup cream
1 tablespoon Swedish mustard (sweet) or some equivalent
1 teaspoon soy sauce


Peel the onions, split it and thinly slice it. Heat the fat in a frying pan, add the onion together with water, cover with a lid and simmer the onions for about 3 minutes. Remove the lid, let the liquid steam off and let the onion take some color.

Slice the sausages, put them in the pan and fry them lightly. Add cream, mustard and soy sauce and boil for a couple of minutes. Serve straight away with boiled or mashed potatoes, peas and carrots. If you wish, you can also add some crispy fried bacon and mushrooms.

Ground Meat Patties with Red Wine Sauce - Pannbiff med rödvinssås

GROUND MEAT PATTIES WITH RED WINE SAUCE
Pannbiff med rödvinssås

A luxurious dish with a hearty red wine sauce, boiled potatoes and fried mushrooms. A favorite of mine through the decades.

1.1 lb ground meat of your choice (I use 50% beef, 50% pork
and pay a little more to have it freshly ground in the shop as
I get a better product)
1 egg
approx 0.4 cup cream or milk
0.2 cup dried white breadcrumbs
1 onion
2 tablespoons oil
salt, pepper
1 tablespoon Japanese soy sauce
butter or margarine for frying

Red wine sauce:
1 carrot
1 onion
2 celery stems
approx 1.6 cups veal bouillon
2 bay leaves
0.4 cup red wine
Maizena for thickening


Beat egg, cream and breadcrumbs and swell for a few minutes. Peel and finely chop the onion. Heat a frying pan with oil and sautée the onion until tender. Flavor to taste with salt and pepper. Stir the ground meat with sautéed onion, bread mixture and soy sauce. Cover well and leave in the fridge for about 1 hour.

Shape the meat into 4 patties and Brown them in fat. Take them up.

Peel and finely chop the vegetables for the sauce and sautée them in the pan juices for 3 to 4 minutes. Flavor to taste with salt and pepper. Add remaining ingredients for the sauce and bring to a boil. Put the meat patties in the sauce and slowly simmer for 10 to 15 minutes. Take the meat up and keep warm. Strain the sauce, flavor to taste and thicken with Maizena.

Serve with boiled potatoes or potato purée, fried chanterelles and fresh thyme. Or something else that you like!

Who feels like learning some kitchen Swedish in writing? I'll try to keep it simple but there will be some amount of explaining anyhow …


Breakfast = Frukost
Lunch = same Word, we nicked it from English
Dinner = Middag (originally means the meal you have at midday, but it's been postponed)
Supper = Kvällsmat

Sandwich = Smörgås
Bread = Bröd
Butter = Smör
Cheese = Ost






Meatballs in Curry Tomato Sauce - Köttbullar i curry- och tomatsås

MEATBALLS IN CURRY TOMATO SAUCE
Köttbullar i curry- och tomatsås

Meatballs in a delicious, easy-made, flavorful tomato sauce. The recipe uses ready-made meatballs, but I always have my own home-made meatballs in the freezer, so I prefer to use them.

Serves 4

1 1/3 lbs meatballs
12.3 oz cauliflower
1 onion
1 red chili fruit
2 tablespoons oil for frying
salt, pepper
2 tablespoons finely cut fresh ginger
2 teaspoons turmeric
1 tablespoon curry 
2 teaspoons ground cumin
1.6 cups tomato juice
8.8 oz green peas
0.4 cup roasted, sliced almonds
approx 0.4 cup chopped parsley


Part the cauliflower in florets. Slice the onion. Split and remove the seeds from the chili and slice thinly. Heat up some oil in a frying pan and fry the cauliflower on medium heat until slightly colored. Flavor with salt and pepper. Add onions, chili and ginger and fry with the cauliflower for a couple of minutes. Dust with the spices and stir. Add meatballs and heat through. 

Add tomato juice and green peas and simmer for 4 to 5 minutes until it's all hot. Flavor to taste with salt and pepper. Sprinkle with almonds and parsley and serve with e.g. boiled rice.

Bacon and Egg Salad - Bacon- och äggsallad

BACON AND EGG SALAD
Bacon- och äggsallad

Serves 4

10.6 oz boiled new potatoes
3 eggs
7 oz green beans
4.4 oz bacon
3.5 oz baby spinach
3.5 oz black olives
½ can green lentils, 7 oz

Dressing:
3 tablespoons olive oil
1 tablespoon vinegar
1 crushed garlic clove
1 tablespoon Dijon mustard
2 tablespoons capers
2 anchovy fillets


Cut the potatoes in pieces. Boil the eggs for 9 minutes. Peel and split them. Bring the beans to a boil in salted water and rinse cold. Shred and fry the bacon and rinse the spinach.

Mix the dressing together. Blend all the ingredients for the salad and pour on the dressing.

Potato Salad with a Special Sauce - Potatissallad med specialgod sås

POTATO SALAD WITH A SPECIAL SAUCE

Serves 8 - 10

3.4 lbs boiled, cold potatoes
1.2 cups thinly shredded leek
1.2 cups shredded, chopped pickled gherkin
or 3 tablespoons capers
1 head iceberg lettuce
2 bunches radishes

Sauce:
0.6 cup soured cream
0.6 cup low-fat mayonnaise
3 tablespoons strong mustard
1 tablespoon grated horseradish (or as much as you like, it's strong)


Make the sauce and put in the fridge for 30 minutes, then mix with sliced potatoes, leek, and gherkin or capers.

Store the salad cold for a couple of hours, then serve in a bowl with shredded iceberg lettuce and sliced radishes.

Twangy Potato Salad - Potatissallad med sting

TWANGY POTATO SALAD
Potatissallad med sting

A very tasty potato salad with simple ingredients. Boil the potatoes 2 days before serving for the best possible result.

Serves 8

2.2 lbs boiled, cold, un-peeled potatoes
2 onions
1 teaspoon paprika
1 teaspoon powdered chili
some curry
1 teaspoon salt

Dressing:
1 tablespoon fresh lemon juice
2 teaspoons apple cider vinegar
1 teaspoon water
½ teaspoon Swedish mustard (sweet) or other equivalent
½ teaspoon herbal salt or spice salt
4 tablespoons oil

Decoration:
chopped parsley


Peel and dice the potatoes in rather large cubes. Chop the onions, put it in a bowl with the potatoes and flavor with paprika, chili, curry, and salt.

Blend together all ingredients for the lemon dressing - lemon juice, water, mustard, and herbal salt - and stir until the salt has dissolved. Add oil and pour the dressing over the potatoes. Stir and store cold for 1 day. Check for seasoning and adjust if needed.

Serve this potato salad room-tempered, absolutely not cold. This is important.
