Clemenza's Stew - Clemenzas gryta

CLEMENZA'S STEW
Clemenzas gryta

Serves 4

3 garlic cloves
2 tablespoons olive oil
2 teaspoons sugar
1 tablespoon balsamic vinegar
2 cans crushed tomatoes,
each approx 14 oz
2 tablespoons tomato paste
0.2 cup red wine
2 tablespoons concentrated
veal fond
1 tablespoon Worcestershire sauce
14 oz salsiccia
10.6 oz small meatballs
salt, pepper
fresh basil

For serving:
pasta
salad
bread


Peel and thinly slice the garlic and sauté in a pot with oil without coloring. Add sugar and vinegar and sauté for another minute. Add crushed tomatoes, tomato paste, wine, fond and Worcestershire sauce and boil for about 30 minutes.

Cut the sausage in small pieces and add to the stew with the meatballs. Boil for 10 minutes. Flavor to taste with salt and pepper and sprinkle with basil. 

Serve with boiled pasta, salad and bread.

Dill-Flavored Meatballs in Mustard Sauce - Dillkryddade frikadeller i senapssås

DILL-FLAVORED MEATBALLS IN MUSTARD SAUCE
Dillkryddade frikadeller i senapssås

Serves 4

2 slices white sandwich bread
0.4 cup regular milk
14 oz ground pork
1 teaspoon salt
some white pepper
2 tablespoons chopped dill

Mustard sauce:
1 onion
2 tablespoons butter
0.8 cup regular milk
2 tablespoons concentrated
chicken fond
2 tablespoons sweet, strong mustard
1 tablespoon roughly ground
French mustard
salt, pepper

For serving:
potatoes
"pointy cabbage" (can't find a better 
translation, sorry!), sautéed in butter

Decoration:
dill


Trim the crusts off the bread and crumble the bread in a bowl. Pour on the milk and swell for 10 minutes. Blend in the meat, salt, pepper and dill and work to a smooth mixture. Shape into meatballs and put them on a plate. 

Mustard sauce:
Peel and finely chop the onion and sauté until tender in a pot with butter. Sift with flour and dilute with milk, cream and fond while stirring. Boil for 5 minutes and flavor with the mustards, salt and pepper.

Put the meatballs into the boiling sauce, some at a time, keeping the sauce boiling all the time. Gently turn them around in the sauce so that they don't break, about 5 minutes.

Serve with boiled potatoes and sautéed cabbage and decorate with dill.

Apple Meatballs with Fried Vegetables - Äppelköttbullar med frästa grönsaker

APPLE MEATBALLS WITH FRIED VEGETABLES
Äppelköttbullar med frästa grönsaker

Serves 2

10.6 oz ground meat, beef + pork
½ ägg
salt, pepper
1 tablespoon French mustard
1 garlic clove
1 apple
2 tablespoons butter or margarine
14 oz vegetables, e.g. broccoli,
cauliflower, red onion, and mushrooms
2 tablespoons cashews
parsley

For serving:
ready-made tomato sauce


Mix ground meat, egg, salt, pepper, mustard, crushed garlic and grated apple to a smooth batter. Shape into 8 large meatballs and fry all around in a frying pan in 1 tablespoon of the butter over medium heat, for about 10 minutes or until done.

Trim the vegetables and mushrooms (champignons) and cut in pieces. Sauté in a frying pan with 1 tablespoon butter until they start to get tender. Sprinkle with cashews and parsley and flavor with salt and pepper.

Serve with the meatballs together with tomato sauce.

Large Meatballs with Red Wine Sauce, Bacon and Mushrooms - Stora köttbullar i rödvinssås med bacon och svamp

LARGE MEATBALLS WITH RED WINE SAUCE,
BACON AND MUSHROOMS
Stora köttbullar i rödvinssås med bacon och svamp

Serves 4

0.4 cup regular milk
0.2 cup dried breadcrumbs
1.1 lb ground beef
1 egg
1 onion
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons chopped fresh thyme
butter

Red wine sauce:
5 oz streaky bacon, sliced
2 shallots
8.8 oz champignons, the brown kind
(in Sweden we call them "champignons
from the forest")
butter
1.2 cups red wine
0.4 cup water
2 tablespoons beef fond

your own recipe for mashed potatoes


Mix milk and breadcrumbs and let it swell for 3 minutes. Mix with ground beef, egg, onion, salt, pepper and thyme. Shape into 12 large meatballs and fry them in butter until nicely colored.

Red wine sauce:
Fry bacon, shallots and mushrooms in butter in a pot until everything is slightly colored. Add wine, water and fond, put in the meatballs and simmer in the sauce for about 10 minutes.

Serve with your own mashed potatoes and vegetables of your choice.

Meatballs in hot curry sauce - Köttbullar i het currysås

MEATBALLS IN HOT CURRY SAUCE
Köttbullar i het currysås

Serves 4

1.1 lb ground meat (beef + pork
or what you prefer)
1 teaspoon salt
some pepper
1 teaspoon ground cumin
1 crushed garlic clove
0.4 cup creme fraiche

Sauce:
2 tablespoons butter or margarine
1 teaspoon curry
2 tablespoons flour
1.2 cups regular milk
2 tablespoons concentrated veal fond
0.4 cup creme fraiche
2 tablespoons mango chutney
some sambal oelek

Decoration:
1½ bananas
curry
0.2 to 0.4 cup peanuts


Work the ground meat together with all the ingredients to a smooth mixture. Shape to round balls. Fry until golden all around in some fat. Lower the heat  and continue frying for 3 to 5 minutes.

Melt the fat for the sauce together with curry. Stir in the flour and dilute with milk and veal fond. Let the sauce slowly simmer while stirring for about 3 minutes. Add creme fraiche, mango chutney and sambal oelek. Bring to a boil again and flavor to taste. Pour the sauce over the meatballs and heat it all through.

Peel and slice the bananas. Fry them in some fat and sprinkle with curry. Decorate with bananas, peanuts and maybe some fresh coriander.

Serve with anything you fancy.

Oven Meatballs with Carrots and Roast Onions - Köttbullar i ugn med morot och rostad lök

OVEN MEATBALLS WITH CARROTS AND 
ROASTED ONIONS
Köttbullar i ugn med morot och rostad lök

Serves 4

Meatballs:
1 lb ground meat (beef + pork)
0.4 cup roasted onions
0.2 cup regular milk
1 egg
1 carrot
salt, pepper

For serving:
pasta of your choice
1 can spicy pasta sauce, tomato
based, e.g. arrabbiata
Parmesan cheese


Put the ground meat, roasted onions, milk and egg in a bowl. Finely grate the carrot, squeeze out excess liquid and add to the meat together with salt and pepper. Preheat oven to 437F. Roll into 16 meatballs, put them on a greased or paper lined baking plate and cook in the oven for about 15 minutes.

Boil the pasta, grate the cheese and heat the sauce while the meatballs are cooking. Serve and enjoy!

Meatballs with Mashed Potatoes and Thyme Sauce - Köttbullar med potatismos och timjansås

MEATBALLS WITH MASHED POTATOES
AND THYME SAUCE
Köttbullar med potatismos och timjansås

Serves 4

Meatballs:
2 slices white bread, crusts trimmed off
0.3 cup regular milk
1 lb ground meat (beef + pork)
1 egg
1 teaspoon salt
some ground allspice
some black pepper
butter for frying

Thyme sauce:
0.8 cup water
3 tablespoons concentrated veal fond
2 tablespoons Chinese soy sauce
2 tablespoons flour
0.8 cup cream
2 tablespoons lingonberry jam
1 teaspoon dried thyme
or 1 tablespoon chopped, fresh thyme
some salt
some pepper

your own recipe for mashed potatoes

For serving:
lingonberry jam
grated carrots and red cabbage


Crumble the crustless bread in a bowl. Pour on the milk and leave to swell for about 10 minutes. Stir in ground meat, egg, salt, allspice and black pepper. Blend well. Roll into 50 small meatballs and fry in butter.

Sauce:
Mix water, fond, soy sauce, flour, cream and lingonberry jam. Add spices and boil for 3 minutes.

Prepare your mashed potatoes. Serve the meatballs with sauce, mashed potatoes, lingonberry jam and grated carrots and cabbage.






Spanish Meatballs in Tomato Sauce - Spanska köttbullar i tomatsås

SPANISH MEATBALLS IN TOMATO SAUCE
Spanska köttbullar i tomatsås

Serves 2

3 tablespoons dried breadcrumbs
½ egg
3 tablespoons cold water
8.8 oz ground beef
1 finely grated garlic clove
2 tablespoons finely chopped parsley
½ teaspoon salt
some black pepper
1 teaspoon olive oil for frying

Tomato almond sauce:
3 tablespoons chopped almonds
½ finely grated garlic clove
½ tablespoon olive oil
2 tablespoons chopped parsley
½ onion, finely chopped
0.8 cup crushed tomatoes
0.4 cup water
0.2 cup white wine
1 tablespoon tomato paste

For serving:
boiled rice


Mix breadcrumbs, egg and water and leave for 5 minutes. Blend in the ground beef, garlic, parsley, salt and pepper. Shape into 8 to 10 meatballs and brown them in oil. Set aside. 

Sauce:
Sauté almonds and garlic in oil in a wide, shallow saucepan. Take it up and mix with the parsley. Sauté the onion in oil in the same pan and add crushed tomatoes, water, wine and tomato paste. Simmer for about 5 minutes and stir occasionally. Mix with the almonds and dilute with water if necessary. Flavor with salt and pepper and bring to a boil.

Put the meatballs in the sauce and heat through for about 5 minutes. Serve with boiled rice.

Chicken Meatballs in Tomato Sauce - Kycklingköttbullar i tomatsås

CHICKEN MEATBALLS IN TOMATO SAUCE
Kycklingköttbullar i tomatsås

Minced chicken flavored with sweet chili, shaped into meatballs that are first fried and then simmered in a delectable tomato sauce. Yes, I love tomato sauce!

Serves 4

1 lb minced chicken
1 small onion
1 garlic clove
0.2 cup sweet chili sauce
0.2 cup dried breadcrumbs
salt, pepper
oil for frying
2 tablespoons tomato paste
2 tablespoons honey or sugar
1 lb crushed tomatoes
0.4 cup water
a 6 inch piece of leek
5½ oz feta cheese


Peel and finely chop onion and garlic. Mix this with minced chicken, sweet chili sauce, breadcrumbs, salt and pepper. Shape into meatballs, as large as you want them. Heat up a frying pan with lots of oil and fry the meatballs until nicely colored all around. Add tomato paste and honey and continue frying for a couple of minutes.

Shred the leek and save some for decoration. Add crushed tomatoes, shredded leek and water to the pan. Simmer over medium heat for 25 to 30 minutes and flavor to taste with salt and pepper.

While the meatballs are cooking, boil your choice of pasta. Crumble the feta cheese over the meatballs and top with some shredded leek.

Serve with pasta and a salad.

Meatball Stew - Köttbullsgryta

MEATBALL STEW
Köttbullsgryta

Green peas, carrots, leek and meatballs are gathered into one lovely stew. You can either cook it in the oven or on the stovetop. Lasting and good food for all ages.

Serves 4

14 oz ground meat (50/50 beef/pork)
2 boiled, cold potatoes
1 teaspoon salt
some allspice or white pepper
1 tablespoon grated onion
0.4 cup milk
1 egg

2 tablespoons butter or margarine

6 small carrots
1 leek
2 celery stems
approx 9 oz frozen green peas or beans
0.4 cup water
some salt


Start with trimming the vegetables. Rinse and scrape or peel the carrots. Cut them in pieces. Rinse and finely shred leek and celery. Put all the veggies in a greased, oven-proof pan, pour on water and salt and cook at 350F for about 10 minutes.

Meanwhile, make the meatballs. Grate the boiled potatoes. Mix potatoes, salt, pepper and onions in the ground meat and add milk and egg. Work until smooth and shape the mixture into meatballs. Brown them in fat in a frying pan.

Transfer the meatballs to the pan with the veggies and cook it all in the oven at 350F for about 15 minutes or until all veggies are tender and the meatballs are done.

Serve straight from the pan with boiled potatoes, salad and bread.

Chicken Meatballs with Herbs and Mushrooms - Kycklingköttbullar med örter och svamp

CHICKEN MEATBALLS WITH HERBS
AND MUSHROOMS
Kycklingköttbullar med örter och svamp

Chicken meatballs with a delicious herb filling. The apple-parmesan mix in the recipe is excellent to serve with the meatballs.

Serves 2

Approx 10½ oz ground chicken
0.2 cup chopped fresh or frozen parsley
salt
pepper

Filling:
5 fresh mushrooms
½ small onion
oil or butter for frying
½ to 1 tablespoon dried thyme
salt, pepper

Apple-parmesan mix:
1 red apple
0.4 cup coarsely grated parmesan
0.2 to 0.3 cup olive oil

For serving:
mashed potatoes
lingonberry jam


Start with the filling. Clean the mushrooms and cut in small pieces. Peel and finely chop the onion. Fry mushrooms and onions until tender in oil or butter on moderate heat with thyme. Flavor with salt and pepper and allow to cool.

Mix the ground chicken with parsley, salt and pepper. Shape into 8 round balls. Make a hollow in each bun and distribute the filling in each. Roll into meatballs and fry on moderate heat for about 15 minutes.

Apple-parmesan mix:
Roughly grate the apple and stir it with parmesan and oil.

Serve the chicken meatballs with the apple mix, mashed potatoes and lingonberry jam.

Danish Meatballs with Red Cabbage - Danska frikadeller med rödkål

DANISH BOILED MEATBALLS WITH RED CABBAGE
Danska frikadeller med rödkål

Serves 4 to 6

1 lb ground pork
2 tablespoons flour
1 egg
1.2 cup milk
1 finely chopped onion
1 teaspoon salt
some black pepper

For frying:
1 tablespoon butter or margarine

Sauce:
1 tablespoon flour
0.8 cup water
½ bouillon cube
soy sauce if needed

For serving:
1 can red cabbage
14 oz broccoli
boiled potatoes


Mix all ingredients for the meat and shape into small patties/meatballs. Fry on rather low heat until nicely colored - it's important that they're cooked through. 

Heat up the red cabbage and flavor if needed (I often mix it with grated apple). Put the meatballs and red cabbage on a serving plate.

Make a sauce base of flour, water and bouillon in the frying pan, stir well and let simmer for a few minutes. Flavor to taste and add some soy sauce if needed. Serve with potatoes and broccoli.

"Italian" Meatballs - "Italienska" köttbullar

"ITALIAN" MEATBALLS
"Italienska" köttbullar

In Italy they flavor the ground meat in a different way than what we're used to here in Sweden. These delicious meatballs have a taste of garlic, rosemary and thyme. If you dilute with sparkling water you get a very light, fluffy meat mixture.

Serves 4 to 5

1 lb ground meat (50/50 beef/pork)
3 tablespoons dried white breadcrumbs
0.8 to 1 cup sparkling water, unflavored of course
2 teaspoons salt
some black pepper
2 tablespoons finely chopped onions
1 crushed garlic clove
½ teaspoon rosemary
½ teaspoon thyme
2 finely chopped tomatoes
2 tablespoons butter or margarine


Work the meat in a bowl, add breadcrumbs and dilute with some of the water. Add salt, black pepper, onions, garlic, rosemary and thyme. Work in the Spices and dilute with more water. Last add the tomatoes. Dilute with remaining water until you have a smooth mixture. If the tomatoes are very juicy you might not need so much water.

Shape the meat into small meatballs and fry until golden in some fat in a frying pan. Put them on a warm serving plate. Whisk out the pan with some water and pour this over the meatballs when serving.

Serve with stewed green beans (or the beans au naturel) and some bread.

Spicy Meatballs with Fried Tomatoes - Kryddbullar med stekta tomater

SPICY MEATBALLS WITH FRIED TOMATOES
Kryddbullar med stekta tomater

These spicy meatballs is a really good version of the everyday meatballs. Serve them with boiled vegetables like green peas or broccoli, and fried tomatoes.

Serves 4

1 lb ground meat, 50/50 beef and pork
2 eggs
1/4 teaspoon dried thyme
½ teaspoon salt
some white pepper
1 garlic clove
2 small, chopped shallots
2 tablespoons finely chopped parsley
butter or margarine for frying
4 to 6 tomatoes


Put the meat in a bowl and add the lightly whisked eggs and Spices. Crush the garlic cloves (or chop it very finely) and mix it in together with the chopped shallots and parsley.

Shape the meat into 8 to 12 plump patties that you fry in browned fat until nicely colored all around and are done. Take them up and keep warm.

Rinse and slice the tomatoes, put them in the pan and gently fry them for a minute or so. Turn them gently.

Serve with boiled (or mashed) potatoes and boiled vegetables.

Meatballs in Curry Tomato Sauce - Köttbullar i curry- och tomatsås

MEATBALLS IN CURRY TOMATO SAUCE
Köttbullar i curry- och tomatsås

Meatballs in a delicious, easy-made, flavorful tomato sauce. The recipe uses ready-made meatballs, but I always have my own home-made meatballs in the freezer, so I prefer to use them.

Serves 4

1 1/3 lbs meatballs
12.3 oz cauliflower
1 onion
1 red chili fruit
2 tablespoons oil for frying
salt, pepper
2 tablespoons finely cut fresh ginger
2 teaspoons turmeric
1 tablespoon curry 
2 teaspoons ground cumin
1.6 cups tomato juice
8.8 oz green peas
0.4 cup roasted, sliced almonds
approx 0.4 cup chopped parsley


Part the cauliflower in florets. Slice the onion. Split and remove the seeds from the chili and slice thinly. Heat up some oil in a frying pan and fry the cauliflower on medium heat until slightly colored. Flavor with salt and pepper. Add onions, chili and ginger and fry with the cauliflower for a couple of minutes. Dust with the spices and stir. Add meatballs and heat through. 

Add tomato juice and green peas and simmer for 4 to 5 minutes until it's all hot. Flavor to taste with salt and pepper. Sprinkle with almonds and parsley and serve with e.g. boiled rice.

Meatballs in tomato sauce - Köttbullar i tomatsås

MEATBALLS IN TOMATO SAUCE
Köttbullar i tomatsås

Meatballs, the most Swedish among food, in a slightly different version. They’re flavoured with basil and put in a tomato sauce.

4 servings

14 oz ground meat, 50% beef, 50% pork
2 slices crumbled white loaf bread
4 tablespoons milk
1 beaten egg
1 teaspoon salt
white pepper
1½ to 2 teaspoons basil
1/3 cup chopped parsley
1/3 cup grated Parmesan cheese

Tomato sauce:
1 tablespoon oil
4 tablespoons chopped onion
1 to 2 crushed garlic cloves
1 can sieved tomatoes, 14 oz
1/3 cup chicken bouillon
1 to 1½ teaspoons dried basil
1 teaspoon dried thyme
cayenne
1/3 cup grated Parmesan cheese

Start with the sauce. Heat the oil in a saucepan and sizzle the onion until tender. Add garlic and sizzle it all for a few minutes. Add tomatoes, bouillon, spices and cheese. Bring to a boil, put a lid on and simmer slowly while you make the meatballs.

Let the breadcrumbs swell in milk for a few minutes. Blend the egg and bread into the ground meat and flavour with salt, pepper, basil, thyme, parsley and cheese. Shape the batter into meatballs, put them in the sauce and boil slowly for 10 to 15 minutes. Flavour the sauce to taste and adjust if necessary. Serve the meatballs with e.g. tagliatelle, rice or potatoes and a green salad.

Meatballs in mustard sauce - Köttbullar i senapssås

MEATBALLS IN MUSTARD SAUCE

The meatballs are flavoured with thyme and parsley and the sauce get its extra twang from mustard. Pasta is good with this.

4 servings

14 oz to 1 lb ground meat,
50/50 (50% beef, 50% pork)
1 finely chopped onion
2 slices crumbled white loaf bread
1/3 cup milk
1 egg
4 tablespoons chopped parsley
3 teaspoons dried thyme
1½ teaspoons salt
½ teaspoons white pepper
2 tablespoons butter or margarine

Mustard sauce:
1½ cup water
1 to 1½ meat bouillon cube
2 tablespoons flour
2/3 cup cream, 15% fat
3 tablespoons mustard
salt, white pepper
chopped chives or spring onions

Mix the ground meat with onions, crumbled white loaf bread, milk, egg, parsley, thyme, salt and pepper. Shape into around 30 meatballs. Brown the fat in a frying pan and fry the meatballs, a few at a time, on medium heat until done, about 10 minutes.

Whisk out the pan with some of the water and crumble the bouillon cube in there. Stir in the flour and dilute with remaining water. Simmer for about 5 minutes while stirring. Add cream and mustard and flavour to taste with salt and pepper.

Put the meatballs in the sauce and warm the dish through. Sprinkle with chopped chives or spring onions and serve.

Lemon meatballs - Citronköttbullar

LEMON MEATBALLS
Citronköttbullar

This is particularly good with pasta! Almost like Lady and the Tramp …

4 servings

1 small onion
1 garlic clove
1 lb ground beef
1 egg
2 tablespoons finely chopped leafy parsley
grated zest from 1 lemon
1/3 cup finely grated Parmesan cheese
some flour to coat the meatballs
butter or margarine for frying
salt, white pepper

Gravy:
3 rounded tablespoons dry white wine
3 rounded tablespoons to 1/3 cup water
fresh juice from ½ lemon
1 teaspoon veal bouillon
1 tablespoon butter or margarine

For serving:
pasta of your choice


Finely chop onion and garlic and mix with ground beef, egg, parsley, lemon zest, Parmesan and some salt and pepper. Roll into large meatballs and coat them with flour (shake off excess flour) and fry them until nicely coloured. Pour wine, water and veal bouillon in the pan, cover and simmer for 3 to 4 minutes until meatballs are done. Stir in the fat.

Serve with pasta and a salad.
