MEATBALLS IN TOMATO SAUCE
Köttbullar i tomatsås
4 tablespoons milk
1 beaten egg
1 teaspoon salt
white pepper
1½ to 2 teaspoons basil
1/3 cup chopped parsley
1/3 cup grated Parmesan cheese
4 tablespoons chopped onion
1 to 2 crushed garlic cloves
1 can sieved tomatoes, 14 oz
1/3 cup chicken bouillon
1 to 1½ teaspoons dried basil
1 teaspoon dried thyme
cayenne
1/3 cup grated Parmesan cheese
Start with the sauce. Heat the oil in a saucepan and
sizzle the onion until tender. Add garlic and sizzle it all for a few minutes.
Add tomatoes, bouillon, spices and cheese. Bring to a boil, put a lid on and simmer
slowly while you make the meatballs.

Meatballs, the most Swedish among food, in a slightly
different version. They’re flavoured with basil and put in a tomato sauce.

14 oz ground meat, 50% beef, 50% pork
2 slices crumbled white loaf bread4 tablespoons milk
1 beaten egg
1 teaspoon salt

1½ to 2 teaspoons basil
1/3 cup chopped parsley
1/3 cup grated Parmesan cheese
Tomato sauce:
1 tablespoon oil4 tablespoons chopped onion
1 to 2 crushed garlic cloves
1 can sieved tomatoes, 14 oz
1/3 cup chicken bouillon
1 to 1½ teaspoons dried basil
1 teaspoon dried thyme
cayenne
1/3 cup grated Parmesan cheese
Let the breadcrumbs swell in milk for a few minutes.
Blend the egg and bread into the ground meat and flavour with salt, pepper,
basil, thyme, parsley and cheese. Shape the batter into meatballs, put them in
the sauce and boil slowly for 10 to 15 minutes. Flavour the sauce to taste and
adjust if necessary. Serve the meatballs with e.g. tagliatelle, rice or
potatoes and a green salad.
