CRUNCHY ORANGE COOKIES
Knapriga apelsinkakor
2 eggs
grated zest from 2 oranges
2 cups flour
4 teaspoons baking powder
3 cups oatmeal
2 tablespoons fresh orange juice
Stir fat and sugar until fluffy. Add eggs and orange zest. Mix flour, baking powder and oats and stir into the batter together with the orange juice. Drop out the batter on greased baking plates (or use baking paper) with approx 1 ¼ inch between them.

Crunchy cookies with flavour of oatmeal and
orange. They’re easy to bake since they neither need to be shaped nor rolled.

7½ oz butter or margarine
2 cups sugar2 eggs

Stir fat and sugar until fluffy. Add eggs and orange zest. Mix flour, baking powder and oats and stir into the batter together with the orange juice. Drop out the batter on greased baking plates (or use baking paper) with approx 1 ¼ inch between them.
Bake in the middle of the oven at 390F for
about 12 minutes. Leave the cookies for a few minutes on the baking plate before
transferring them to a rack to cool completely.
