Toddy apples - Toddyäpplen

TODDY APPLES
Toddyäpplen

A delicious dessert made from tart apples and an egg crème. Decorate the dessert with cherries.

4 servings

4 middle-sized apples
2/3 cup water
1/3 cup brown sugar
2 tablespoons fresh lemon juice

Egg crème:
4 egg yolks
3 tablespoons sugar
2 tablespoons cognac or 4 tablespoons concentrated apple juice

Decoration:
flaked almonds or fresh berries

Peel and core the apples and slice them. Bring water, sugar and lemon juice to a boil in a saucepan. Boil the apple slices in the liquid until tender, about 5 minutes, and allow to cool in the liquid.

Beat eggs and sugar in a bowl until white and fluffy. Stir in the cognac. Pour the batter in a saucepan and heat on low heat while beating until the crème is thick and fluffy, but do not boil.

Serve the apple slices in serving bowls and pour the egg crème on top. Decorate with flaked almonds or berries.
