CHICKEN RATATOUILLE
Kycklingratatouille
4 servings
1 small aubergine
1 onion
1 green bell pepper
8 oz fresh mushrooms
3 to 4 tablespoons oil
2 crushed garlic cloves
1 can crushed tomatoes, 14 oz
½ to 1 tablespoon Italian salad spice
½ teaspoon dried thyme (if desired)
salt, pepper
Cut chicken, zucchini and aubergine in cubes. Chop
the onion, cut the pepper in pieces and slice the mushrooms. Heat the oil in a
frying pot or a saucepan and brown the chicken for about 5 minutes. Add
zucchini, aubergine, onion, pepper, mushrooms and garlic and sizzle it all for
a few minutes. Add tomatoes, salad spice and thyme if desired.

Here, chicken is served with vegetables like
zucchini, aubergine and bell peppers in a flavourful casserole.

Boil for about 10 minutes, uncovered, until the
vegetables are tender. Flavour to taste with salt and pepper and serve with
rice or pasta and a crisp salad.
