Pralinkakor
If you don’t have time to bake off the dough the
same day, no worries, because you can easily store this dough for up to one week
in the fridge.
Approx 40 cookies
3½ oz butter or margarine
2/3 cup brown sugar1 egg
1 teaspoon vanilla sugar
1 tablespoon treacle/molasses
2 cups flour
½ teaspoon baking powder
1/3 cup coarsely chopped walnuts
Brown sugar glaze:
1/3 cup brown sugar1 tablespoon treacle/molasses
4 tablespoons water
¾ cup powdered sugar
Stir fat and brown sugar until fluffy. Add egg, vanilla sugar and treacle. Mix flour and baking powder. Stir it into the batter and work to a dough. Shape into sausages, diameter 2 inches, and wrap them up in plastic foil or waxed paper and store in the fridge for at least 2 hours, but preferably longer.
Cut the sausages in approx ¼ inch thick slices and
put them on greased baking plates (or use baking paper) with an inch or so in
between. Press a couple of nut pieces into each cookie and bake in the middle
of the oven at 350F for about 10 minutes until coloured.
Brown sugar glaze:
Bring brown sugar, treacle and 3 teaspoons water to a
boil while stirring. Blend in the powdered sugar and remaining water. Add more
water if too firm. Drip the glaze over the cookies while still warm and allow
to cool.Enjoy!
