WALNUT COOKIES
Valnötskakor
1 cup oatmeal
1½ teaspoons baking powder
¼ teaspoon ground cinnamon
3½ oz butter or margarine
1/3 cup raisins
1/3 cup chopped walnuts
3 tablespoons treacle/molasses
5 tablespoons soured cream or plain yogurt
1 beaten egg
Mix flour, sugar, oats, baking powder and cinnamon in a bowl. Cut the fat in pieces and work it in with a fork. Chop raisins and nuts and add it to the batter together with treacle. Mix soured cream and beaten egg and stir this in as well. If you put it in the fridge for about 15 minutes it will be easier to shape.
Valnötskakor
Cookies with a special taste from cinnamon and
treacle, crisp on the outside and slightly tough on the inside – just like me!
:-D
30 to 35 cookies
1 ¾ cups flour
1 cup brown sugar1 cup oatmeal
1½ teaspoons baking powder
¼ teaspoon ground cinnamon
3½ oz butter or margarine
1/3 cup raisins
1/3 cup chopped walnuts
3 tablespoons treacle/molasses
5 tablespoons soured cream or plain yogurt
1 beaten egg
Mix flour, sugar, oats, baking powder and cinnamon in a bowl. Cut the fat in pieces and work it in with a fork. Chop raisins and nuts and add it to the batter together with treacle. Mix soured cream and beaten egg and stir this in as well. If you put it in the fridge for about 15 minutes it will be easier to shape.
Shape walnut-sized balls of the batter and put them
with about 1 inch in between on baking plates, greased or with baking paper.
Flatten the cookies with the back of a spoon or with a fork, then bake in the
middle of the oven at 390F for about 15 minutes or until golden
brown. Cool on a rack.
Enjoy!
