Potato bread rolls - Potatisfranska

POTATO BREAD ROLLS

Some mashed potatoes in the dough makes these bread rolls extra juicy and tasty. From one batch you get 12 buns, but you can very well double the recipe if you want more of them!

12 buns

4 boiled, cold potatoes
1 cup milk
1 oz fresh yeast
2 tablespoons oil
2 tablespoons brown sugar
1 teaspoon salt
2 ¾ cups flour

For brushing:
egg or water


Mash the cold potatoes. Heat the milk to 37°C/body heat. Crumble the yeast in a mixing bowl and dissolve it in some of the milk. Add remaining milk, potatoes, oil, sugar and salt. Stir in the flour little by little and work the dough until it releases the bowl, then cover and leave to prove for about 30 minutes.

Turn the dough out onto a floured surface and knead until smooth and pliable. Divide the dough in 12 pieces and roll them into buns. Cover and let rise on greased baking plates for about 30 minutes. Brush the buns with egg or water and bake in the middle of the oven at 350 to 390F for about 15 minutes. Let cool on a rack.
