Schweizisk makaronigratäng
A creamy macaroni gratin like this one is lovely served
with sausages, ham or chicken. A salad and bread is also needed, as always in
my case (at least the salad …).

2 ¾ to 3 ¼ cups macaroni
water, salt2 oz butter or margarin
4 tablespoons flour
2½ cups milk
2 cups grated, flavourful cheese, preferably several good ones :-D
(you can also substitute some of the grated cheese with blue cheese)
½ to 1 teaspoon salt
white pepper
1 chili pepper (optional)
2 tablespoons melted butter or margarine
3 to 4 tablespoons dried breadcrumbs
Decoration:
diced sweet peppersBoil the macaroni in salted water according to package instructions. Drain well. Melt 1 ¾ oz fat in a saucepan, beat in the flour and then the milk and boil for a couple of minutes. Add 2 cups grated cheese, salt, pepper and chopped chili fruit if you wish. Blend the macaroni into the stew and pour it all in
a greased, oven-proof dish. Mix melted fat, dried breadcrumbs and 4 tbsps
grated cheese and divide it on top of the macaroni. Bake in the middle of the
oven at 440F for 20 to 30 minutes. Decorate with diced peppers and
