AUBERGINE WITH CHOPPED ONIONS
Aubergine med lökhack
1 teaspoon dried thyme
salt
1 garlic clove
grated zest from ½ lemon
2 tablespoons fresh lemon juice
2 tablespoons chopped parsley
1 tablespoon chopped chives
1/3 cup oil
salt
coarsely ground black pepper
Cut the aubergine in ¼ inch thick slices. Heat the oil in a frying pan and sizzle the slices on both sides for a few minutes. Flavour with thyme and salt.

Serving marinated slices of aubergine with meat is
really good – it’s especially good with barbecued meat.

8 oz aubergine
2 tablespoons oil1 teaspoon dried thyme

Marinade:
1 small red onion1 garlic clove
grated zest from ½ lemon
2 tablespoons fresh lemon juice
2 tablespoons chopped parsley
1 tablespoon chopped chives
1/3 cup oil
salt
coarsely ground black pepper
Cut the aubergine in ¼ inch thick slices. Heat the oil in a frying pan and sizzle the slices on both sides for a few minutes. Flavour with thyme and salt.
Marinade:
Finely chop the onion and crush the garlic. Mix
onion, garlic, lemon zest, lemon juice, parsley, chives and oil. Flavour to
taste with salt and black pepper.
Put the aubergine slices on a dish, pour the
marinade on top and marinate for 1½ to 2 hours, then serve with e.g. cold cuts,
grilled chicken or kassler.
