BRITTLE PEANUT COOKIES
Spröda jordnötskakor

Brittle cookies with a lovely taste of peanuts. Try mixing chopped nuts in the batter – this makes them extra delicious to munch on with a cup of coffee or tea.

30 to 35 cookies

3½ oz butter or margarine
3½ oz peanut butter
2/3 cup brown sugar
½ teaspoon vanilla sugar
1 egg
1 ¼ cups flour
½ teaspoon baking powder
¼ teaspoon salt

Decoration:
chopped peanuts


Stir fat, peanut butter and brown sugar until smooth. Add vanilla sugar and egg and stir until well blended. Mix flour, baking powder and salt and stir into the batter. Shape into walnut-sized pieces and put them on a greased baking plate (or use baking paper). Flatten them with a fork and sprinkle with chopped peanuts.

Bake in the middle of the oven at 350F for 10 to 12 minutes or until golden. Transfer them to a rack and allow to cool.
