ORANGE FILLED HONEY BUNS
Apelsinfyllda honungsbullar

Freshly baked wheat buns with orange filling and honey glazing are irresistible – the lovely smell makes everyone come to the kitchen to see what’s going on!

Approx 30 buns

1 cup milk
1 ¾ oz fresh yeast (do you have special yeast
for sweetbread? We do here.)
2 tablespoons sugar
2 tablespoons honey
½ teaspoon salt
2 lightly beaten eggs
grated zest from 1 orange
3½ oz melted butter or margarine
4 to 4 1/3 cups flour

Orange filling:
2½ oz butter or margarine
1/3 cup sugar
grated zest from 2 oranges

Honey glaze:
1/3 cup honey
5 tablespoons sugar
2 oz butter or margarine


Heat the milk to 37°C, body heat. Crumble the yeast in a bowl and stir it with some of the milk. Add remaining milk and blend in sugar, honey, salt, eggs, orange zest and fat. Add the flour, little by little, and work the dough until pliable and releases the bowl. Cover and leave to prove for about 30 minutes.

Mix honey, sugar and fat for the glaze and bring to a boil. Pour in a roasting pan.

Turn the dough out onto a floured work surface and knead until smooth. Divide in two and roll out each part to a rectangular cake. Spread with fat, sprinkle with sugar and orange zest and roll together. Cut each roll in 15 pieces and put them in the roasting pan, cut side up. Cover and prove for 25 to 30 minutes. Bake in the middle of the oven at 390F for about 25 minutes and unmould immediately on a rack to cool.
