Mocha squares - Mockarutor

MOCHA SQUARES
Mockarutor

You get 20 lovely squares from this batch, and you make them with simple ingredients that are always at hand in your pantry.

2 cups flour
1 ¾ cups sugar
1 teaspoon baking powder
1 teaspoon vanilla sugar
7 oz butter or margarine
1 cup strong coffee or water
4 tablespoons cocoa
1/3 cup cream, 15% fat
2 eggs

Glaze:
3½ oz butter or margarine
4 tablespoons milk
2 tablespoons cocoa
2 ¼ cup powdered sugar
1 teaspoon vanilla sugar

Mix flour, sugar, baking powder and vanilla sugar in a bowl. Mix fat, coffee and cocoa in a saucepan and heat to boiling point. Mix it into the flour mixture and add cream and eggs. Blend well, preferably with an electric beater, and pour the batter in a greased roasting pan, approx 14 x 10 inches. Bake in the middle of the oven at 390F for about 20 minutes or until the cake is done.

Glaze:
Mix fat, milk and cocoa in a saucepan and heat to boiling point. Blend in powdered sugar and vanilla sugar and stir until smooth. Pour the glaze over the cake and leave to set. Cut in squares and serve.

Enjoy!
