BLUEBERRY SPLIT
Blåbär Split
grated zest from 1 lemon
3 tablespoons redcurrant jelly
2 tablespoons port
1 tablespoon Maizena
1 tablespoon water
2 teaspoons fresh lemon juice
½ teaspoon ground cinnamon
Mix blueberries, grated lemon zest, redcurrant jelly
and port in a saucepan. Heat on low heat while stirring until the jelly has
dissolved. Stir the Maizena with water and stir it into the sauce. Bring to a
boil so that it thickens. Flavour to taste with lemon juice and cinnamon.
Blåbär Split
A luxurious blueberry sauce flavoured with port and
cinnamon. Serve it warm with ice cream and a small cookie or biscuit.
4 to 6 servings
1 ¼ cup fresh blueberries
or approx 7 oz frozen berriesgrated zest from 1 lemon
3 tablespoons redcurrant jelly
2 tablespoons port
1 tablespoon Maizena
1 tablespoon water
2 teaspoons fresh lemon juice
½ teaspoon ground cinnamon
vanilla or nougat ice cream
Pour the blueberry sauce over the ice cream and
serve immediately.
You can substitute the port with grape juice.
