Festive banana pork dish - Kalasgott med banan

FESTIVE BANANA PORK DISH
Kalasgott med banan

Party time? Try this dish – easy to make in advance, even for many guests, and then you just have to re-heat it and you have a smash hit.

4 servings

1 1/3 lbs boneless pork from shoulder or ham
1 tablespoon butter or margarine
salt, pepper
1½ to 2 bananas
¼ cup salted peanuts
6 slices bacon
1 ¼ cup heavy cream
½ meat bouillon cube
½ teaspoon Chinese soy sauce
3 tablespoons mustard
2 tablespoons mango chutney
salt
pepper
2/3 cup grated cheese


Shred the meat. Melt the fat in a frying pan and brown the meat until coloured. Transfer the meat to an oven-proof dish and flavour with salt and pepper. Slice the bananas and put them with the peanuts in the dish. Fry the bacon until crisp and then cut or break them in pieces and put them in the dish.

Heat cream, bouillon cube, mustard and mango chutney in a saucepan. Flavour to taste with salt and pepper – remember that peanuts, bacon and bouillon cube contain a lot of salt already. Pour the cream mixture in the dish and sprinkle with cheese.

Bake in the upper part of the oven at 390F for about 20 minutes or until the dish is slightly coloured. Serve with boiled rice and a salad.
