Colourful rice au gratin - Färgglad risgratäng

COLOURFUL RICE AU GRATIN
Färgglad risgratäng

This rice gratin is really good and colourful. Plus it’s cheap, made from just a few ingredients. Make use of any old cheese you have in the fridge and grate it to use in this dish.

4 servings

½ onion
2 carrots
½ red bell pepper
4 oz broccoli
2 tablespoons butter or margarine
¾ cup long-grained rice
1½ cups chicken bouillon
1 tablespoon chopped parsley
salt, pepper
1 cup grated cheese

Peel onion and carrots. Chop the onion, slice the carrots and cut bell pepper and broccoli in pieces. Melt the fat in a saucepan and sizzle onion and carrots for a few minutes. Add sweet pepper, broccoli, rice and bouillon, cover and boil for 20 minutes or until the bouillon is sucked up by the rice. Add parsley and flavour to taste with salt and pepper.

Transfer it all to an oven-proof dish and sprinkle with cheese. Bake at 480F for about 10 minutes and serve.
