Frozen strawberry meringue - Frusen jordgubbsmaräng

FROZEN STRAWBERRY MERINGUE
Frusen jordgubbsmaräng

A refreshing dessert made from mashed strawberries and frozen strawberry meringue. Serve with fresh, sliced strawberries.

4 servings

2 cups mashed strawberries (see below)
powdered sugar or honey
3 egg whites
1/3 cup sugar

Decoration:
sliced fresh strawberries
mint leaves

For the mashed strawberries, you mash or purée them in a bowl with a fork or in a food processor or mixer for a few seconds. Set half of the mash aside and flavour the remaining mash with powdered sugar or honey to your liking. Cover and store in the fridge until serving.

Beat the egg whites until stiff – first slowly, then speed up. Add sugar, 1 tbsp at a time, and beat until stiff, tough and glossy. Add the unsweetened strawberry mash and beat slowly until all is well blended. Pour the batter in a container suitable for freezing and seal well. Freeze the strawberry meringue for at least 1 hour or until the mixture is firm. You can keep this in the freezer for a month.

For serving:
Divide the sweetened strawberry mash into 4 portion glasses or in a larger bowl. Spoon the strawberry meringue on top and decorate with sliced strawberries and mint leaves.
