WARM TUNA SANDWICHES

1 chopped tomato
1/3 cup chopped leek or onion
2 mashed anchovy fillets (optional)
1 teaspoon capers (optional, but definitely recommended
if you like the taste, which I do!)
1 cup grated cheese, e.g. Cheddar
4 bread rolls or the like
Drain the tuna. Heat the cooking oil in a saucepan. Sizzle tomato and onion until tender, then add optional anchovies and capers and the tuna. Stir in half of the cheese and heat it all through.

4 sandwiches
1 can tuna in water or oil, approx 7 oz
1 tablespoon oil1 chopped tomato

Split the bread rolls and roast them lightly under
the oven grill. Divide the tuna mix on the four bottom halves and sprinkle with
remaining cheese. Bake the sandwiches in the middle of the oven at 480 to 525F for 3 to 4 minutes or until the cheese is bubbling and slightly
coloured. Top with the upper halves and serve, perhaps with a green salad,
carrot sticks and olives?
