"Poor Knights" with Cheese and Ham - Fattiga riddare med ost och skinka

"POOR KNIGHTS" WITH CHEESE AND HAM
Fattiga riddare med ost och skinka

Serves 2

2 eggs
1 to 2 tablespoons regular milk
4 slices sandwich bread
1.7 oz cream cheese
2 slices cheese
2 slices smoked ham
butter and a neutral-tasting oil
for frying


Lightly whisk eggs and milk in a bowl. Spread cream cheese on two of the slices of bread and put on cheese and ham. Cover with the other two bread slices and press together a little. Dip on both sides in the egg-milk mixture and transfer to a hot frying pan with oil and butter. Fry until nicely colored over low heat until the cheese is well melted.

You can also put Dijon mustard and sliced red onion in between for more taste (I prefer it that way).

Ham and Pineapple Sandwich - Skinksnittar med ananas

HAM AND PINEAPPLE SANDWICH

10 sandwiches

5.3 oz smoked ham
0.2 cup canned, crushed pineapple
7 oz cream cheese
0.2 cup low-fat creme fraiche
2½ teaspoons curry
10 slices white sandwich bread


Dice the ham and drain the pineapple. Stir the cream cheese with creme fraiche. Flavor with curry and add ham and pineapple.

Trim the crusts off the bread and spread with the cheese mixture. Cut the bread diagonally and put them together two and two.

Warm Crayfish Sandwich - Varm kräftmacka

WARM CRAYFISH SANDWICH
Varm kräftmacka

4 sandwiches

4 long sandwich breads
1 small leek
1 red bell pepper
1 can crayfish tails in liquid,
approx 7 oz without liquid
1½ small jars bleak roe,
approx 2.7 oz per jar
(in Sweden we can buy it in
cute, small glass jars)
4 hard-boiled eggs
3 egg whites
0.8 cup mayonnaise
chopped dill


Preheat oven to 392F.

Trim and shred the leek and do the same with the bell pepper. Sauté in a frying pan in some butter until glossy and tender. Allow to cool. Divide the mixture on the sandwich bread. Drain the crayfish tails and reserve some for decoration. Divide the remaining tails on the bread. Do the same with the bleak roe after first reserving a little for decoration. Peel the eggs and split them. Place two egg halves on each slice of bread.

Beat the egg whites until stiff and stir the mayonnaise into them. Spread on the sandwiches and bake in the middle of the oven for about 10 minutes. Decorate with remaining crayfish tails and roe. Sprinkle with some chopped dill.

Shrimp Toast with Avocado Creme - Räktoast med avokadokräm

SHRIMP TOAST WITH AVOCADO CREME

Serves 4

4 slices white bread
2 tablespoons olive oil
7 oz peeled shrimp
(approx 1 lb unpeeled)
parsley

Avocado creme:
2 avocados
0.4 cup creme fraiche
fresh juice from ½ lime
2 tablespoons sweet chili sauce
salt, pepper


Avocado creme:
Split the avocados, remove the stones and scoop out the pulp. Mash it in a bowl together with creme fraiche and lime juice. Flavor to taste with sweet chili sauce, salt and pepper.

Fry the bread until crisp in a saucepan with oil. Cut the bread diagonally, put on a dab of avocado creme and top with shrimp and parsley.

Serves 4


1 grilled chicken
1½ oz fresh baby spinach
4 oz Cherry tomatoes
3 tablespoons mayonnaise
3 tablespoons low-fat crème fraîche
1½ tablespoon Dijon mustard
4 tablespoons roasted pine nuts
4 bagels




Remove skin and bones from the chicken and cut the meat in small pieces. Shred the spinach and split the tomatoes.


Mix mayonnaise, crème fraîche and mustard in a bowl. Fold in the chicken, spinach and tomatoes and blend in the pine nuts.


Serve this in split bagels.

Mushroom Sandwich - Svampmacka

MUSHROOM SANDWICH
Svampmacka

If you've been lucky enough to find some edible mushrooms on your walk through the woods, you can make this delicious sandwich.

Serves 4

14 oz trimmed mushrooms of your choice
2 tablespoons butter or margarine
2 slices boiled or smoked ham
0.6 cup grated cheese
2 tablespoons chopped parsley
2 tablespoons cream
2 tablespoons water
approx ½ teaspoon salt
some white or black pepper
some paprika
4 slices white bread
4 parsley sprigs


Cut the mushrooms in smaller pieces and fry them in the fat in a frying pan. Shred the ham and mix it with the mushrooms. Add cheese and parsley and dilute with cream and water. Stir and simmer for a few minutes. Flavor with salt and other spices.

Divide the mushroom stew on the bread (toast them first if you wish) and decorate with the parsley sprigs. Serve with a salad.

Ham and Cabbage Sandwich - Smörgås med skinka och vitkål

HAM AND CABBAGE SANDWICH
Smörgås med skinka och vitkål

This sandwich is both filling and tasty. The white wine mustard gives an extra twang.

Serves 2

1 cup shredded green cabbage
0.2 cup grated carrots
2 tablespoons finely cut spring onions
or leek
2 tablespoons mayonnaise
1 teaspoon vinegar
2 slices toast
Dijon mustard
mayonnaise
salt, pepper
4 slices mild cheese
4 to 8 slices smoked ham

Decoration:
bell pepper (optional)


Rinse and finely shred the cabbage. Peel and grate the carrots. Rinse, trim and cut the spring onions or leek. Mix cabbage, carrots and leek with mayonnaise and vinegar in a large bowl.

Toast the bread and spread with mustard and mayonnaise. Flavor with salt and pepper. Slice the cheese. Alternate cheese and ham on the sandwiches with cheese as the top layer. Put the sandwiches under the oven grill  for 2 to 3 minutes or heat the oven to 480F. Take them out, top with the cabbage mix, decorate with optional bell pepper and serve.

Warm Liver Pâté Sandwich - Varm pastejsmörgås

WARM LIVER PÂTÉ SANDWICH
Varm pastejsmörgås

In front of the TV one night or the other you might feel the need for a little something, even if you've had a sturdy dinner. I know you shouldn't stuff yourself just before going to sleep, but a nice, warm sandwich and a cup of tea should be no problem.

Serves 4

4 slices white bread
3½ oz spreadable liver pâté
2 to 3 tomatoes
1 small can mushrooms, approx 4½ oz
1 tablespoon butter or margarine
3 tablespoons grated cheese


Spread the pâté on the bread. Slice the tomatoes and put them on the sandwiches. Drain the mushrooms and sauté them in the fat. Divide the mushrooms on top of the sandwiches and sprinkle with the grated cheese.

Bake in the oven at 480F for 5 to 7 minutes. Serve with a green salad.

Hot Turkey Banana Curry Sandwiches - Varma kalkonmackor med curry och banan

HOT TURKEY BANANA CURRY SANDWICHES

Serves 4

8 slices white bread
butter
2 bananas
8 slices smoked turkey
approx 16 slices cheese


Heat the oven to 440F.

Spread the bread with butter. Slice the bananas. Put a slice of turkey on each slice of bread and cover with bananas. Dust with curry and top with sliced cheese, enough to cover the bread. Put in the oven for about 10 minutes until the sandwiches are nicely colored.

Chantarelle Bruschetta - Kantarellbruschetta

CHANTARELLE BRUSCHETTA
Kantarellbruschetta

Scrumptious with a drink! Crunchy bruschette with chantarelles, capers and home-made dressing.

Serves 4

Approx 8 baguette slices
salt
1 slice aubergine cut lengthwise, very thin
olive oil
1 3/4 oz chantarelles
10 black, pitted olives
3 spring onions
2 tablespoons capers

Dressing:
1 egg yolk
1 small garlic clove
1 teaspoon Dijon mustard
0.2 cup olive oil
0.2 cup rapeseed oil
1 teaspon white wine vinegar


Lightly toast the bread.

Sprinkle the aubergine with a little salt and leave for about 30 minutes. Dab off the water. Turn the aubergine over in olive oil and fry until golden on both sides. Cut in small cubes. 

Trim the mushrooms and cut in smaller pieces. Heat up some olive oil in a frying pan and fry the mushrooms until tender. Flavor with salt and pepper. Coarsely chop the olives and cut the spring onions in thin slices. Put all this in a bowl and add aubergine, chantarelles and capers. Blend gently.

Dressing:
Stir the egg yolk together with crushed garlic and mustard. Add the oil dropwise while stirring continuously. Flavor to taste with vinegar, salt and pepper.

Divide the mushroom mix over the sliced bread and drizzle with the dressing just before serving.

WARM LONG SANDWICHES

A warm sandwich is good in the evening with just a cup of tea or bouillon. Make them long so each person can decide how large a piece they want.

4 lengths, approx 12 inches in length each

Sardine sandwich:
2 slices white bread cut lengthwise
1 tablespoon butter or margarine
approx 5½ oz cottage cheese
2 cans sardines in tomato sauce
1 tablespoon chili sauce
8 slices cheese, e.g. Port Salut

Sausage and anchovy sandwich:
2 slices white bread cut lengthwise
1 tablespoon butter or margarine
3½ oz finely shredded smoked sausage of your choice
4 tomatoes
1 small can anchovy fillets
0.8 cup grated cheese


Sardine sandwich

Butter the bread and put the cottage cheese in a line in the middle. Mash the sardines with a fork and add the chili sauce. Spread this mixture on the sandwiches and cover with sliced cheese. Bake in the oven at 440F for about 12 minutes or until the cheese has melted and is lightly colored.

Sausage and anchovy sandwich

Butter the bread. Cover the Surface with shredded sausage and put on sliced tomatoes and anchovy fillets. Sprinkle with grated cheese. Bake in the oven at 440F for about 12 minutes or until the cheese has melted and is lightly colored.

Cut the sandwiches in pieces at the table.

Chicken Chèvre Sandwich - Kycklingsandwich med getost

CHICKEN CHÈVRE SANDWICH
Kycklingsandwich med getost

A really rich sandwich with fried chicken, aubergine/eggplant and mango. Some goat's cheese on top does the trick to the full!

4 slices sourdough bread
2 chicken fillets
salt, pepper
rapeseed oil for frying
1 tablespoon curry
1 small aubergine
olive oil for frying
1 ripe mango
5½ oz chèvre (goat's cheese)
1 red chili fruit
some rocket leaves
2 to 3 tablespoons "runny" honey

For serving:
mango chutney


Toast the bread on both sides and heat the oven to 440F.

Thinly slice the chicken and flavor with salt and pepper. Fry the meat in the rapeseed oil for 1 to 2 minutes on each side and flavor with some curry. Take it up and rinse the pan. Slice the aubergine and fry until golden in the olive oil. Flavor with some salt. Cut the mango in pieces, cut the chèvre in pieces and thinly slice the chili.

Put some rocket leaves on each slice of bread. Alternate chicken fillet, aubergine slices, chili and mango, put a few pieces of chèvre on top and drizzle with some honey. Put in the oven for about 10 minutes and serve with mango chutney.

Dijon Breads - Dijonbröd

DIJON BREADS

These sandwiches are delicious as … yes. I'm a huge mushroom lover and they are sooo tasty. I used to make them when it was my turn to host the practice night of our barbershop harmony quartet, Clarity, where I was the baritone.

Makes 4 sandwiches

24 large mushrooms
1 tablespoon butter or margarine
½ teaspoon salt
4 slices white bread
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce (or HP Sauce)
2 teaspoons tomato paste
1 teaspoon potato flour
1 tablespoon finely chopped chives
0.4 cup heavy cream


Clean and cut off the feet of the mushrooms (save them for a lovely salad or anything). Sauté the hats in some fat in a frying pan until golden. Flavor with salt. Toast the bread, put them in an oven-proof pan and put the mushroom hats on the bread.

Stir together mustard, Worcester or HP sauce, tomato paste, potato flour and chives. Beat the cream until stiff and mix it into the sauce. Spread the sauce onto the mushrooms and bake in the oven at 480F for 8 to 10 minutes or until lightly colored. Serve right away with a mixed salad.

Warm cheese-and-ham sandwiches - Varma ost- och skinksmörgåsar

WARM CHEESE-AND-HAM SANDWICHES
Varma ost- och skinksmörgåsar

A warm sandwich is good with a cup of tea or a glass of juice (or milk for me, please!). These are made with cheese, ham and mustard butter.

8 sandwiches

8 hamburger buns

Mustard butter:
3½ oz butter or margarine
2 tablespoons mustard
2 teaspoons grated horseradish
1/3 cup finely chopped onion
1 tablespoon poppyseeds (optional)

8 slices smoked ham
8 slices cheese, strong if you like that


Split the hamburger buns. Stir together fat, mustard, horseradish, onion and optional poppyseeds and stir until smooth. Spread the mustard butter on the bread halves.

Put 1 slice ham and 1 slice cheese on 8 of the bread halves and then top with the other halves. Wrap the sandwiches up in aluminum foil and put them on a baking plate. Bake in the oven at 390F for about 20 minutes or until the cheese has melted and the sandwiches are heated through.

Serve with a salad of iceberg lettuce, shredded red bell pepper and split blue grapes.

Very long shrimp sandwich - Räklängd

VERY LONG SHRIMP SANDWICH

Take a break in the evening and make some warm shrimp sandwiches. Make them really long and let everyone cut a suitable piece for themselves. There will probably be leftover bread, so make a larger batch of what you have on it or put remaining bread in the freezer. :-D

2 long sandwiches, approx 4 servings

1 lb un-peeled shrimp
or 7 oz peeled
2 avocados
1/3 cup mayonnaise
3 tablespoons chili sauce
3 tablespoons chopped dill
2 white loaf breads, cut in slices
lengthwise so that each slice is
as long as the bread
(in Sweden we can buy them
already cut and there are normally
4 or 5 slices in each package)
butter or margarine
2 teaspoons fresh lemon juice
salt, pepper
1 ¼ to 1 ¾ cups grated cheese


Peel the shrimps. Peel the avocados and cut them in thin slices. Mix mayonnaise, chili sauce and dill. Spread the sliced bread with a thin layer of butter or margarine. Put on the sliced avocado, drizzle with fresh lemon juice and sprinkle with some salt and pepper. Put on the shrimps, add mayonnaise in dabs and sprinkle with cheese.

Bake in the upper part of the oven at 440 to 480F for about 10 minutes or until the cheese has melted and is coloured.

Serve with a salad and a glass of beer or white wine.

Poker sandwich - Pokermacka

”POKER SANDWICH”
Pokermacka

A generously large and rich sandwich for a late evening meal, perhaps after a poker game? A crisp salad and a glass (or five) of cold beer are lovely accompaniments.

4 sandwiches

5 oz Emmenthaler cheese or some
other flavourful cheese
5 oz boiled or smoked ham
4 oz Kesella or Greek or Turkish yogurt
1/3 cup cream, 15% fat
1 to 2 tablespoons chopped parsley
½ teaspoon Italian salad spice
salt
white pepper
paprika
4 bread rolls of the flatter kind (if I’m 
not making any sense, you can see in the picture)
butter or margarine

Decoration:
parsley
tomatoes


Finely dice cheese and ham. Stir the Kesella or yogurt with the cream until really smooth and blend in parsley, salad spice (a mixture of dried herbs really), salt, pepper and paprika. Add cheese and ham and flavour to taste.

Split the breads and spread a thin layer of butter or margarine on each half. Divide the ham mixture on the bottom parts and top with the upper halves. Put the breads on a baking plate dressed with baking paper and bake in the upper part of the oven at 390 to 440F for 10 to 15 minutes.

Decorate with tomato wedges and parsley and serve your delicious little supper. You can also use white loaf bread for this.

Warm tuna sandwiches - Varma tonfisksmörgåsar

WARM TUNA SANDWICHES

4 sandwiches

1 can tuna in water or oil, approx 7 oz
1 tablespoon oil
1 chopped tomato
1/3 cup chopped leek or onion
2 mashed anchovy fillets (optional)
1 teaspoon capers (optional, but definitely recommended
if you like the taste, which I do!)
1 cup grated cheese, e.g. Cheddar
4 bread rolls or the like


Drain the tuna. Heat the cooking oil in a saucepan. Sizzle tomato and onion until tender, then add optional anchovies and capers and the tuna. Stir in half of the cheese and heat it all through.

Split the bread rolls and roast them lightly under the oven grill. Divide the tuna mix on the four bottom halves and sprinkle with remaining cheese. Bake the sandwiches in the middle of the oven at 480 to 525F for 3 to 4 minutes or until the cheese is bubbling and slightly coloured. Top with the upper halves and serve, perhaps with a green salad, carrot sticks and olives?

Pub sandwich - Pubmacka

Leftover chicken or turkey in the fridge? Then make something really good. With salami, tomatoes and cheese you quickly make a delicious sandwich, excellent with a glass of beer.

4 sandwiches

3 tablespoons soft butter or margarine
1 large, crushed garlic clove
4 bread rolls
2 to 3 tomatoes
1 teaspoon capers
2 cups chopped turkey or chicken breast
1 teaspoon oregano
¼ teaspoon salt
2 tablespoons cooking oil
1 ¾ cups grated cheese, e.g. Cheddar
12 slices salami
some cayenne


Mix fat and crushed garlic. Split the rolls and spread the garlic butter on the halves. Place the breads on an oven-proof dish or a baking plate and warm them in the middle of the oven at 440F for about 5 minutes.

Chop tomatoes and capers and mix with turkey and oregano. Flavour to taste with salt. Heat the oil in a saucepan and sizzle the mixture for a couple of minutes. Blend in half of the cheese and then divide the mixture onto 4 of the bread halves. Put on the salami, sprinkle with remaining cheese and some cayenne.

Bake in the middle of the oven at 440F for about 5 minutes until the cheese has melted and the sandwiches are really hot. Put on the upper halves and serve the sandwiches.

PARTY SANDWICHES

This recipe gives you suggestions for two different varieties of sandwiches, one with tuna filling and one with crab filling. Serve with a glass of sparkling wine.

10 to 12 tuna sandwiches

10 to 12 slices white loaf bread
5 to 6 lettuce leaves
1 can tuna in water, approx 6 oz
½ onion
2/3 cup mayonnaise
salt
black pepper
black caviar
grapes

10 to 12 crab sandwiches

10 to 12 slices white loaf bread
5 to 6 lettuce leaves
1 can salad crab, approx 6 oz
2 hard-boiled eggs
4 tablespoons mayonnaise
2 sprigs chopped dill
salt
red caviar
dill sprigs


How to make the tuna sandwiches:

Toast the bread. Put lettuce leaves on half of them. Drain the tuna well and chop the onion. Mix tuna, onion and mayonnaise in a bowl and flavour with salt and pepper. Divide the filling on the bread slices with lettuce leaves on. Put remaining slices on top, then cut the bread into triangles. Decorate the sandwiches.

How to make the crab sandwiches:

Toast the bread. Put lettuce leaves on half of them. Drain the crab well and chop the eggs. Mix crab, eggs, mayonnaise, chopped dill and salt. Divide the filling on the bread slices with lettuce leaves on. Put remaining slices on top, then cut the bread into triangles. Decorate the sandwiches.

Minute steak sandwich - Kvällsmacka med lövbiff

MINUTE STEAK SANDWICH

Fill a bread roll with juicy shredded beef and an avocado mayonnaise – a rich and filling sandwich for lunch or supper!

4 sandwiches

4 bread rolls
1 tablespoon butter or margarine
4 minute steaks
salt, pepper
4 lettuce leaves
½ to 1 sliced onion
2 sliced tomatoes
4 slices cheese of your choice

Avocado mayonnaise:
1 to 2 ripe avocados
4 tablespoons mayonnaise
2 to 3 tablespoons mustard
1 to 2 crushed garlic cloves
¼ to ½ teaspoon salt
dash black pepper

Melt the fat in a frying pan and fry the leafy-thin steaks for a minute or so on each side. Flavour with salt and pepper. Shred the meat.

Peel and mash the avocados in a bowl. Blend in the mayonnaise, mustard and garlic and flavour to taste with salt and pepper.

Split the bread rolls and spread a thin layer of avocado mayonnaise on them. Put a lettuce leaf on each of the “bottom halves” and then put on the shredded beef. Put on onions, tomatoes and cheese, top with remaining mayonnaise and put on the “upper halves” of the bread.
