SHRIMP TOAST WITH AVOCADO CREME
Räktoast med avocadokräm
Serves 4
4 slices white bread
2 tablespoons olive oil
7 oz peeled shrimp
(approx 1 lb unpeeled)
parsley
Avocado creme:
2 avocados
0.4 cup creme fraiche
fresh juice from ½ lime
2 tablespoons sweet chili sauce
salt, pepper
Avocado creme:
Split the avocados, remove the stones and scoop out the pulp. Mash it in a bowl together with creme fraiche and lime juice. Flavor to taste with sweet chili sauce, salt and pepper.
Fry the bread until crisp in a saucepan with oil. Cut the bread diagonally, put on a dab of avocado creme and top with shrimp and parsley.
