LIGHTLY FROZEN STRAWBERRY GAZPACHO
Lightly frozen strawberry gazpacho
Serves 4
4 cups strawberries
1 vanilla pod
0.2 cup concentrated elderberry drink
0.4 cup water
2 tablespoons sugar
2 star anises
For serving:
fresh berries
vanilla ice cream
Trim the strawberries. Split the vanilla pod lengthwise, scrape the seeds into a saucepan and also put in the pod itself. Add elderberry drink, water, sugar and star anises. Boil for a couple of minutes until the sugar has dissolved, then allow to cool. Take up the vanilla pod and anises.
Mix strawberries and syrup to a smooth soup. Chill before serving. You can also put it in the freezer for a few hours before serving, to a consistency of a loose sorbet. Pour into serving bowls and top with fresh berries and a scoop of ice cream.
