WARM CRAYFISH SANDWICH
Varm kräftmacka
4 sandwiches
4 long sandwich breads
1 small leek
1 red bell pepper
1 can crayfish tails in liquid,
approx 7 oz without liquid
1½ small jars bleak roe,
approx 2.7 oz per jar
(in Sweden we can buy it in
cute, small glass jars)
4 hard-boiled eggs
3 egg whites
0.8 cup mayonnaise
chopped dill
Preheat oven to 392F.
Trim and shred the leek and do the same with the bell pepper. Sauté in a frying pan in some butter until glossy and tender. Allow to cool. Divide the mixture on the sandwich bread. Drain the crayfish tails and reserve some for decoration. Divide the remaining tails on the bread. Do the same with the bleak roe after first reserving a little for decoration. Peel the eggs and split them. Place two egg halves on each slice of bread.
Beat the egg whites until stiff and stir the mayonnaise into them. Spread on the sandwiches and bake in the middle of the oven for about 10 minutes. Decorate with remaining crayfish tails and roe. Sprinkle with some chopped dill.
