EASY-MADE CHICKEN GRATIN

Serves 2
12.3 oz chicken fillets
1 tablespoon butter or margarine
0.6 cup ajvar relish
0.4 cup low-fat creme fraiche
1 teaspoon grated ginger
6 spring onions, sliced
0.4 cup grated cheese
thyme
For serving:
boiled rice for 2
1 tablespoon parsley, chopped
salad
Shred the chicken and fry in butter in a frying pan for about 3 minutes. Mix with relish, creme fraiche and ginger.
Divide the sliced spring onions in oven-proof serving bowls. Cover with the chicken mix and sprinkle with cheese. Bake in the middle of the oven for about 10 minutes.
