OVEN FISH ROULADES WITH CURRY SAUCE

Serves 2
4 plaice fillets
salt, white pepper
dried breadcrumbs
2 teaspoons butter or margarine
Sauce:
1 teaspoon curry
1 teaspoon butter or margarine
1 teaspoon Maizena
0.8 cup cream, not necessarily
heavy cream
1 teaspoon concentrated
chicken fond
1 tablespoon mango chutney
salt, pepper
Preheat oven to 347F.
Sprinkle the fish fillets with salt and pepper and roll them up. Coat them all around with breadcrumbs and place them in a greased, oven-proof pan. Brush with melted fat and put in the middle of the oven. Cook for about 10 minutes.
Heat up the curry in some butter in a saucepan. Add Maizena and cream while stirring. Flavor with fond, mango chutney, salt and pepper.
Serve with boiled potatoes or rice and a salad.
